Fast Egg tortilla


60 cal 1/2 c egg beater

30 cal 1 slice fat free cheese Borden single

35 1/4 c orida O'Brien potatoes

40 cal 1 turkey sausage link ( precooked)

( pinch dried diced onion, black pepper, salt if you like)

1 tsp water

100 cal 1 smart tortilla 100 calories

------------------------------

265 calories add your choice of condiment ( remember calories)



spray coffee mug w/ pam

Add pot & sausage link (cut up in to tiny pc) & spices w/ tsp water in micro on 1 min mix and micro additional 40 sec.


set aside . spray same cup again w/pam

add egg btr cook 1 min.

Stir.

Micro 40 sec- 1 mins.

mix all together & place on a warm tortilla place cheese on top & condiment.


serve... Yummy!

Getting Back on Track




Its time to get back on track. I have gained 10lbs back. But Its funny usually I would be so upset but I am not. I enjoyed vacation, the holidays, & several birthday parties. And with being sick a few times exercise has not been at the top of the to do list.


I am hoping Monday my cold will be gone & back to exercising 4-5 days a week. I have been trying to come up with new & interesting recipes. I have bought both books (above) from amazon.com & have found some good low cal recipes. So I plan on trying more of them .
There a few things I really need to start doing again
1 writing it all down ( food I ate)
2 exercise
3 Prepare some foods ahead of time.
4 get a buddy... someone to talk to & work out with if I struggle
my dads on it but he can not work out as much. We do talk about it.
Back to work I guess

AM Apple Scramble






1 pc bread ( nickles 35 cal)
1 c peeled/ diced apple 53 cal
1/4 tsp vanilla extract (less than 1 cal... we will count as 1)
2 tbsp light vanilla soy milk 7.5 cal
1/2 c. egg btr 60 cal
1/2 tsp cinnamon 0 cal
2 pkts sweetener 0 cal
dash salt ( optional)
3 tbsp Oats 56.25 cal

Per book ingredients 242 calories
*********** per my ingredients 212.75
Toast bread
Mix all ingredients except bread.
Tear toast in to pieces place In blender or Food processor & add mixture. Pulse to make it mixed & chunky looking.
Cook on stove top as you would scrambled eggs\
I tried this this morning & It was delicious

5 Things you should eat

Dr Oz. I love him!!
He was who inspired me ( and some other stuff ) to change my eating habits.
I love his show & I think he is amazing. He smarts makes him a very Sexy Man! I must have a thing for older guys~

anyway here are 5 things that they believe will help to keep cancer at bay. But as in everything in life ... they can not garuntee it.... but they believe the help

1. Bok Coy cabbage 3 times a week 1/2 c.

2. Cooked Tomatoes (if fresh cook 30 mins before eating) or canned 2-3 times a week 1/2 c.

3. Flounder 6 oz. 3 times a week

4. Strawberries

5. Artichoke ( hearts) 1/4 c. per day.....( never had these before)

Fruit Dip


2tbsp fat free kraft cream cheese 40 cal
6tbsp Cool Whip Lite ( green cntr) 45 cal
Mix & add 1 pkt equal

85 calories & use as a fruit dip for your favorite Fruit

Recipes


3/4 c- 1 c. egg beaters ( I used 3/4 c) *90 calories
1 c. Broccoli chopped into small pc. ( small as you like) *32 calories
Steam broccoli in Ziploc steam bag
1/2 c. fat free Kraft shrd cheddar cheese *90 calories
Spray 3 muffin cups with pam. Preheat oven 400*. split the broccoli between the 3 cups & then split the egg beater between the 3. ( cups my look full)

Bake for approx 10 mins check to see if they look like their cooking or browning and divide the cheese among the 3 let it melt

Have 2 pc Nickles 35 calorie Light Bread toasted
spray with a spritz I can not blv butter
